Are you ready for Cinco De Mayo?! I am too! I’m excited to share this beautiful confetti salsa!!


Confetti Salsa


1 cup yellow corn

1 can black beans

2 cups cherry tomatoes

1/4 cup diced onions

2 T cilantro

salt and pepper to taste

1 lemon

1 lime


  1. Dice onions, tomatoes, cilantro.  Add to a bowl.
  2. Rinse and drain beans.  Add to bowl.
  3. Add corn and add salt and pepper to taste.
  4. Top with juice of 1 lime and 1 lemon. Serve with veggies or chips and enjoy!
